    Biscuit breakfast casserole is a hearty and comforting breakfast or brunch option. It comes together so easily and can be made the night before.

    These mini casseroles combine a fluffy biscuit, breakfast sausage, eggs, and cheese for the perfect breakfast. It is so delicious with simple ingredients that everyone loves. I’m sure you already have everything on hand.

    The refrigerated flaky biscuits at the bottom are buttery soft. These small batch buttermilk biscuits work great for this recipe if you don't want to use canned ones.

    The savory breakfast sausage is cooked and then crumbled over top the biscuit. The egg and heavy whipping cream adds such a rich and creamy flavor. Topped with sprinkled cheese and green onions to create a satisfying breakfast dish.

    Ingredients

    • Biscuits- In this recipe, we are using refrigerated biscuits. You can use ones such as Grands or these small batch buttermilk biscuits are perfect for this casserole.
    • Sausage- Ground breakfast sausage is cooked then baked.
    • Eggs- These add texture and bind everything together in the casserole.
    • Heavy whipping cream- This adds creaminess and richness to the dish. If you can also use half and half or milk.
    • Cheddar cheese- Take a minute to shred some cheese over top the casserole. It melts better than store bought.
    • Green onions- These chopped onions add flavor and a bit of crunch.
    • Seasonings- Add salt and pepper to taste.

    Instructions

    Preheat your oven to 350°F and grab those ingredients from your refrigerator. Then it's time to assemble the biscuit breakfast casserole.

    Whisk together the eggs and heavy whipping cream in a mixing bowl. Season with salt and pepper to taste.

    Add the ground sausage to a skillet over medium high heat, and saute until the meat is completely browned.

    Layer half of the meat into each of the ramekins.

    Bake for 15 to 20 minutes until cooked completely through. Garnish with green onions before serving.

    Hint: You can partially pre-cook the canned biscuits while the sausage is cooking. This ensures they will be fully cooked when the casseroles are finished baking, while still maintaining their soft texture inside the casserole. This technique helps to avoid undercooked or doughy biscuits in the finished dish.

    Variations

    • Switch up the protein. Use bacon, ham, chorizo, or ground turkey sausage in place of ground breakfast sausage.
    • Switch up the cheese. Colby Jack, Mozzarella or Pepper Jack are all great alternatives to cheddar cheese.
    • Add in vegetables. Cooked onions, mushrooms, bell peppers or spinach are wonderful in a breakfast casserole.
    • Add a topping. Chopped chives, avocado slices, or a doll up of sour cream can make great toppings for the biscuit breakfast casserole.
    • Spice it up. Add in extra spice and seasonings such as garlic, basil, chili, or onion powders.

    You can also try using a smaller batch of my mini frittata egg mixture to make frittata topped biscuits instead. Just leave out the sausage and cheese and top each biscuit with the frittata egg mixture before baking.

    Tips

    Top tip: Make sure to grease the two ramekins very well. You can use cooking spray or coconut oil. This will help the casserole not stick to the bottom of them.

    • Prep Ahead. Make sure to have your refrigerated biscuits ready to cut down on baking time. Also, you can use prep ahead of time your meat and store in the refrigerator until ready to assemble casserole.
    • Drain excess grease from meat. Make sure to drain the grease or the casserole could end up soggy and oily.
    • Use freshly grated cheese. Unfortunately, store bought cheese just doesn’t melt as well. It contains an anti-caking agent that makes it harder to melt then a typical block cheese.
    • Cook vegetables before baking. If you decide to add in extra vegetables just make sure to sauté them beforehand. Raw vegetables have a lot of extra water content so it can make the casserole watery.
    • Test for doneness. Insert a toothpick into the center of the casserole. It should come out clean which shows the eggs are done.

    Serving suggestions

    Biscuit breakfast casserole pairs with many dishes. Air fryer home fries or a side of fruit go very well. If you are looking to add something sweet to this savory dish, try these small batch cinnamon rolls or these air fryer apple fritters.

    You can also add a tasty drink. This delicious casserole can be served with a strawberry spinach smoothie or an iced americano coffee.

    Storage

    Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. For freezing, place in a freezer safe airtight container or freezer safe bag for up to 3 months.

    Can this biscuit breakfast casserole be made vegetarian?

    Yes, just omit the sausage and replace with vegetables of your choice.

    Why is my breakfast casserole soggy?

    Not draining any excess grease from the meat can lend to a soggy casserole. It also might just need extra time to cook. Insert toothpick into center of casserole to see if eggs are set. It should come out clean when it is done.

    Can this biscuit breakfast casserole be made ahead of time?

    Yes, all ingredients can be prepped the night before and assembled. Just make sure to cover in the refrigerator.
