Biscuit Breakfast Casserole in Single Servings

Ingredients

  • 2 refrigerated biscuits
  • 8 ounces ground breakfast sausage
  • 2 large eggs
  • 3 tablespoon heavy whipping cream
  • ½ cup shredded cheddar cheese
  • ¼ cup chopped green onions
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 350°F.
  • Press a refrigerated biscuit into the bottom of each of two well greased ramekins.
  • Whisk together the eggs and heavy whipping cream in a mixing bowl. Season with salt and pepper to taste.
  • Add the ground sausage to a skillet over medium high heat, and saute until the meat is completely browned.
  • Layer half of the meat into each of the ramekins.
  • Pour the egg mixture evenly into the ramekins.
  • Sprinkle the tops of the ramekins with cheese.
  • Bake for 15 to 20 minutes until cooked completely through.
  • Garnish with green onions before serving.

Notes

You can use prep ahead of time your meat and store in the refrigerator until ready to assemble casserole.
Drain excess grease from meat. Make sure to drain the grease or the casserole could end up soggy and oily.
Use freshly grated cheese. Unfortunately, store bought cheese just doesn’t melt as well. It contains an anti-caking agent that makes it harder to melt then a typical block cheese.
To test for doneness, insert a toothpick into the center of the casserole. It should come out clean which shows the eggs are done.
