    Instructions

    Preheat air fryer to 370°F (or preheat the oven to 350°F) and set the cook time to 5 minutes.

    In a heated oiled skillet over medium heat, sauté onions until translucent. Add in red and green bell peppers. Sauté bell peppers until crisp-tender. Set aside.

    Gently place an oven-safe pan onto the Air Fryer tray. Place silicone muffins on the pan. Evenly pour the egg mixture on each silicone muffin.

    Ingredients

    • 3 egg whites
    • 1 small finely chopped onion ¼ cup
    • 1 small chopped red bell pepper ¼ cup (deseeded)
    • 1 small chopped green bell pepper ¼ cup (deseeded)
    • ⅓ cup heavy cream
    • ¼ cup grated Parmesan cheese
    • ⅛ teaspoon garlic powder
    • ⅛ teaspoon ground white pepper
    • pinch of kosher salt
    • 1 to 2 tablespoons olive oil

    Instructions

    • Preheat Air Fryer at 370°F (188°C). Set at 5 minutes.
    • In a heated skillet with oil, sauté onions until translucent. Add in red and green bell peppers. Sauté bell peppers until crisp-tender. Set aside.
    • Add salt, ground white pepper, and garlic powder in a bowl with egg whites. Vigorously beat egg whites until seasoning has been well-blended.
    • Pour heavy cream and stir in Parmesan cheese.
    • Add in cooked onion and bell peppers. Blend well.
    • Gently place a pan onto the Air Fryer tray. Place silicone muffins on the pan. Evenly pour egg white mixture on each silicone muffin.
    • Insert tray into the middle cooking chamber near the rotisserie catch.
    • Cook egg white mixture in the Air Fryer for 5 minutes until top is golden in color. Inserted toothpick at the middle should come out clean. Let stand for at least 5 minutes.

    Notes

    This Air Fryer recipe uses an Instant Vortex Plus Air Fryer Oven. Not all Air Fryers cook the same way. It’s best to keep watch during your initial tests after purchasing.
    If you don't have an air fryer, the muffins can be baked in a 350°F oven until they test done, about ten minutes.
    TIPS:
    Egg white mixture fits perfectly in 4 silicone muffins without filling to the brim.
    Parmesan cheese provides enough saltiness but if you prefer salty food, you can adjust the kosher salt.

        I have, and they do freeze and thaw well. You can also reheat them right from frozen but I prefer thawing them first if I have the time.
