    Mango Popsicles

    These mango popsicles come together so easily and offer lots of tropical flavor. A cool and refreshing treat on a hot summer's day that is sure to be enjoyed by both adults and kids alike.

    I'm sure loving the taste of tropical flavors over here this summer, especially mango fruit. My mango pineapple smoothie is so delicious as well as this mango salsa. These mango popsicles are the latest in my favorite ways to enjoy this seasonal fresh fruit.

    These mango ice popsicles are mouthwatering and refreshing. They are such a delight after being outside in the heat. I have been keeping a stash in my freezer for myself to enjoy but can't keep enough on hand. My kids love them as much as I do. 

    Just like my homemade vanilla ice cream, these popsicles come together using a few simple ingredients. Another perk of making at home is that I can make them healthier since I'm using all real ingredients. No fillers or additives like some store-bought ones. 

    These popsicles are sure to be a treat for you and your whole family this summer. The fresh, ripe mango blended with hints of tangy lemon juice then frozen in popsicle form creates a perfection to enjoy on a hot day.

    Ingredients

    • Mango - A fresh mango is going to be sweeter and juicier to blend. Frozen can be used but you will need to thaw before blending to release the excess water content.
    • Sugar - The sweetener for the popsicles that will be melted in hot water.
    • Lemon juice - Use freshly squeezed lemon juice when possible. It gives the popsicles a bit of a tangy taste while helping to balance out the sugar. 
    • Lemon zest - Optional, but adds an extra vibrant pop in color to the popsicles while boosting flavor.
    • Water - The base liquid for blending. You can use coconut water or even milk, if desired.

    Instructions

    Let's gather our ingredients and blender to create those delicious tropical summer treats.

    Combine all the ingredients with ¼ cup of cold water in a blender.

    Blend on high until smooth. Check consistency, if it's too thick, add extra water up to ½ a cup.

    Pour the mixture into popsicle molds, filling them almost to the top. Insert a wooden popsicle stick into each mold, pushing it nearly to the bottom so that about 1.5 inches sticks out.

    Place the molds in the freezer and let them freeze for at least 8-12 hours.

    To remove the popsicles, briefly run the molds under hot water and gently wiggle them out. Enjoy them immediately or return them to the freezer.

    Hint: If the outside is sticky and slightly soft, prevent them from sticking together by placing them on a baking sheet lined with parchment paper or in a single layer in a large freezer-safe plastic bag. Once fully frozen, transfer them to a freezer-safe container or bag.

    Variations

    • Change up the sugar. Instead of white sugar, you can use any sugar substitute such as monk fruit, stevia or allulose. You can also use honey or maple syrup.
    • Sugar free. You can skip the added sugar since mangoes are naturally sweet and use either coconut milk, coconut water or a little more water when blending. You will need to adjust according to taste.
    • Add more fruit. Add in additional tropical tasting fruit such as pineapples. You can also add in bananas, peaches and berries to change up the flavor profile.
    • Make creamy. Add in a dollop of Greek yogurt or coconut milk in place of the water to create a creamy mango popsicle.
    • Add some texture. Place mango chunks into the mango mixture before inserting the sticks into the molds.
    • Make boozy popsicles. You can add your favor type of alcohol to make these mango popsicles have a boozy twist to them.

    Tips

    Top tip: Taste after blending. Adjust the sweetness or tanginess to your preference. If too sweet, add a little more lemon juice to help balance it out. If not sweet enough, add more of the dissolved sugar mixture or sweetener of choice.

    • Use ripe mangoes. These will have the sweetest flavor and be the juiciest.
    • Blend until smooth. Blend the mixture until you get a smooth consistency. It should be equivalent to a puree. If it's too thick, add extra water up to a ½ cup.
    • Avoid air bubbles. Before freezing, tap the popsicle molds on the countertop to get any possible air bubbles out and to level the mixture.
    • Popsicle sticks. Make sure to insert sticks all the way down into the mold leaving about 1.5 inches sticking out.
    • If the sticks don't remain upright, freeze the popsicles for 30-60 minutes before adding the sticks.
    • Removing the popsicles. Briefly run the mold under warm to hot water and gently wiggle them out.

    Serving suggestions

    Mango ice popsicles are such a refreshing tropical tasting treat on a hot summer's day. Just like these frozen yogurt treats and this strawberry lemonade, they are great to enjoy while cooling off.

    Mango popsicles are also perfect to serve at a BBQ after enjoying grilled meats such as shrimp skewers or chicken thighs. They are an excellent choice if you are looking for a lighter dessert option.

    Storage

    Ensure all popsicles are fully frozen before storing. If the outside is sticky or slightly soft, prevent them from sticking together by placing them on a baking sheet lined with parchment paper or in a single layer in a large freezer safe bag. Once fully frozen, transfer them to a freezer safe container or bag.

    A freezer safe container or bags helps prevent freezer burn. When stacking in a container or bag, place a piece of parchment paper between each popsicle so they do not stick together. They freeze well for 2-4 months.
