    Refreshing, zesty and flavorful this mango salsa is a wonderful addition to enjoy with chips, grilled meats and tacos. The delightful combinations of juicy ripe mangoes, crisp red onions and peppers is mouthwatering.

    This mango salsa is filled with bold colorful fruits and veggies that look so good in the bowl you might hesitate to eat it.  But don't worry, the taste…oh my goodness is absolutely amazing with the fresh mangoes, crunchy peppers, red onions, cilantro and citrusy lime juice sprinkled throughout. You won't be able to stop eating this delicious mango salsa and putting it on everything.

    This fresh mango salsa recipe is a delightful twist on traditional tomato-based salsa. I love those too, but this one has such a unique flavor with tropical and citrusy hints that it is becoming my new favorite. I enjoy having it alongside these Shrimp Skewers. Also, mango salsa on fish taste wonderful on this Baked Cod.

    Short on time? No worries, this recipe comes together with only a few ingredients and in 10 minutes time so you can enjoy this delicious dish. In addition, it is also easy to customize to your liking. You can add too or take away different vegetables or mix and match fruits.

    Ingredients

    • Mangoes- Freshly ripe mangoes that are firm not mushy.
    • Red onions- Finely chopped. You can also use white onions if that is what you have on hand.
    • Red and Green Bell Peppers- One small pepper of each color chopped. Adds a wonderful pop of color to the salsa.
    • Lime juice- Freshly squeezed from limes. Use bottled in a pinch.
    • Cilantro- Freshly chopped and provides additional citrus flavor.
    • Kosher salt- Add to taste.

    Instructions

    Let's gather our freshly chopped vegetables and fruit to assemble this delicious salsa.

    In a large shallow bowl, let's start by adding the ripe mangoes, red onion, red bell pepper, green bell pepper, and cilantro.

    Sprinkle salt and drizzle lime juice. Mix until well-combined.

    Chill for at least 30 minutes in the refrigerator.

    Serve immediately with your favorite chips or mains.

    Hint: Use ripe but firm mangos. They should be slightly soft to the touch and give off a sweet aroma, ensuring they are flavorful and juicy without being mushy. This will make your salsa vibrant and refreshing with a pleasant texture.

    Variations

    Here are a few suggestions on ways to customize this salsa to your liking.

    • Turn up the heat. Add in some diced jalapenos or habanero peppers to kick this salsa up a notch.
    • Change up the onions. Use pickled red onions in place of regular diced onions to give the salsa a little more tanginess to the flavor. You can also use white onions as well.
    • Add additional fruit. Add in pineapples, peaches, avocadoes, or even strawberries to make this salsa a bit fruitier in flavor.
    • Add beans. Black beans or pinto beans taste great combined with the fruit and veggies.
    • Use herbs. Add in a sprinkle of mint or a few diced garlic cloves to boost flavors.

    Tips

    Top tip: Season with salt to your desired preference. Also, add additional lime juice if you like. If the mangoes are very sweet, an additional tablespoon of lime juice may be needed to balance sweetness.

    • Choose ripe mangoes. They should be soft to the initial touch but still firm. You don't want them to be overly ripe or they can get mushy in the salsa.
    • Choose fresh ingredients. The fresher the ingredients the better the taste. Aim to get the freshest vegetables and fruits for this salsa.
    • Chop all ingredients before assembling. This will help save on time if everything is already chopped and ready to come together.
    • Let salsa sit. Be sure to allow the salsa to sit in the refrigerator for at least 30 minutes to chill. This resting time allows all the delicious flavors time to mend together.
    • Serve chilled. It is important to enjoy this salsa right after it has chilled. This is not a salsa that needs to be warmed. Serving chilled will boost the most flavors.

    Serving suggestions

    Fresh mango salsa can be enjoyed on a variety of different dishes. With the juicy mangoes, it can give any dish a more tropical taste. It goes great over top these Chicken and Ground Pork Tacos.

    Storage

    Store leftovers in an airtight sealed container in the refrigerator for up to 3 days.

    I do not recommend freezing salsa as the veggies and fruit can get watery and mushy.

      The mild red & green peppers leave this too mild, needs a large jalapeno or pasilla pepper to liven it up.
