1tablespoonlemon juicefreshly squeezed, about 1 lemon
½tablespoonlemon zestoptional
¼cupsugarmelted in ⅛ cup hot water
Instructions
Combine all the ingredients with ¼ cup of cold water in a blender and blend on high until smooth. Check consistency, if it’s too thick, add extra water up to ½ a cup.
Pour the mixture into popsicle molds, filling them almost to the top. Insert a wooden popsicle stick into each mold, pushing it nearly to the bottom so that about 1.5 inches sticks out.
Place the molds in the freezer and let them freeze for at least 8-12 hours.
To remove the popsicles, briefly run the molds under hot water and gently wiggle them out.
Enjoy them immediately or return them to the freezer.
If the outside is sticky and slightly soft, prevent them from sticking together by placing them on a baking sheet lined with parchment paper or in a single layer in a large freezer-safe plastic bag. Once fully frozen, transfer them to a freezer-safe container or bag.
Notes
If popsicles are runny: If the sticks don’t remain upright, freeze the popsicles for 30-60 minutes before adding the sticks. Storage: Store in the freezer for up to 2-4 months.
