    Instructions

Once you've gathered the ingredients for the banana rolls, preheat the air fryer to 370°F and set the cook time to 16 minutes. Then follow the simple step-by-step directions below to make delicious turon in the air fryer.

Sliced bananas on a cutting board with a knife.

Cut baby bananas into four, lengthwise. You'll also want to cut the jackfruit arils into strips.

Lightly brush one wrapper with water. Place 1 slice of banana and 1 strip of jackfruit at the center then sprinkle some light brown sugar.

A glass bowl of brown sugar glaze with spoon.

In a small bowl, mix the remaining light brown sugar with 1 tablespoon water.

Air fryer tray with rolls of banana turon on it.

Drizzle some light brown sugar glaze on top of lumpia rolls. Transfer rolls onto Air Fryer trays or basket. Lightly brush with oil.

    Variations

While the classic combination of ripe bananas and brown sugar wrapped in spring roll wrappers is undeniably delicious, there are countless ways to reinvent this Filipino favorite. Here are just a few ideas:

    • Add shredded coconut to the filling. The natural sweetness and texture of the coconut perfectly complement the creamy banana, creating a tropical delight that will transport your taste buds to paradise.
    • Incorporate grated cassava into the filling. You add an interesting textural element and enhance the sweetness of the bananas. The addition of cassava brings a unique earthy flavor to this already delightful treat, making it even more irresistible
    • Make it chocolatey. Add a small piece of chocolate, chocolate chips, or a chocolate spread (like Nutella) along with the banana before rolling. The melted chocolate will create a delightful contrast with the sweet bananas.
    • Add nuts. Toss in some crushed nuts (like cashews, peanuts, or almonds) along with the banana. The nuts will provide a crunchy element to the filling.
    • Try other fruits. Experiment with different fruits in addition to or instead of jackfruit. Mango slices, air fried strawberries, or even thinly sliced air fryer apples can add unique flavors to the turon.
    • Add some spice. Sprinkle a bit of ground cinnamon on the banana and before rolling. This warm spice complements the sweetness of the filling.
    • Omit the jackfruit. Leave it out if you don't like it or can't find it.

    Tips

Top tip: Choose ripe but firm bananas for the best flavor and texture. Overly ripe bananas can become mushy during cooking.

    • Use Lumpia Wrappers: Traditional banana turon uses lumpia wrappers (spring roll wrappers) made from flour. These wrappers provide a crispy texture when fried.
    • Slice Bananas Uniformly: Slice the bananas lengthwise into halves or thirds, depending on their size. Aim for uniform slices to ensure even cooking and consistent texture.
    • Roll Tightly: Place a coated banana slice (and a slice of jackfruit, if using) near the edge of a lumpia wrapper and tightly roll it up, folding in the sides as you go, similar to rolling a burrito.
    • Seal the edges: Brush a little water or egg wash along the edge of the wrapper before finishing the roll. This helps prevent the turon from unraveling during frying.
    • Don't Overcrowd: Air fry the turon in batches for more servings. This ensures they cook evenly and don't stick together. Overcrowding the pan can cause uneven air frying.
    • Flip for Even Browning: Gently turn each turon halfway for even browning. Use tongs to prevent damaging the delicate wrapper.

    Serving suggestions

Air fried banana rolls are best enjoyed while still warm and crispy. The contrast between the crisp wrapper and the soft, sweet filling is delightful.

While traditional banana turon doesn't typically require dipping sauce, you can get creative and serve it with a drizzle of caramel sauce, a dusting of powdered sugar, or even a scoop of vanilla ice cream.

    Storage

If you have leftovers, store them in an airtight container once cooled to maintain their crispiness. They should be consumed in the refrigerator within 3 days at room temperature or up to a week. Reheat in an oven or toaster oven to regain some of the crunch.

You can also freeze turon for up to 3 months. Individually wrap each piece in plastic wrap or aluminum foil before placing them in a freezer-safe bag or container. This will help maintain their shape and prevent freezer burn. When you're ready to eat, simply thaw them in the refrigerator overnight and reheat in a preheated oven until crispy.

    Ingredients

    • 4 pieces ripe baby bananas or plantain
    • 2 to 3 arils ripe jackfruit cut into strips
    • 4 to 5 tablespoons light brown sugar
    • 16 pieces lumpia wrapper separated
    • 1 to 2 tablespoons olive oil
    • water to seal lumpia wrappers

    Instructions

    • Pre-heat Air Fryer at 370°F (188°C). Set at 16 minutes.
    • Cut baby bananas into four, lengthwise.
    • Gently lay 1 lumpia wrapper on a large plate. Using a square wrapper, it should look like a diamond or 2 triangles. Lightly brush with water.
    • Place 1 slice of baby banana and 1 strip of jackfruit at the center then sprinkle some light brown sugar.
    • Fold each side of wrapper then roll. Seal by lightly brushing some water.
    • In a small bowl, mix the remaining light brown sugar with 1 tablespoon water. No need to completely dissolve.
    • Drizzle some light brown sugar glaze on top of lumpia rolls (turons). Do this for the remaining nino banana, making 16 lumpia rolls (turons).
    • Gently transfer the 16 rolls onto two Air Fryer trays. Lightly brush with oil. Flip each roll and lightly brush with oil.
    • Slowly insert tray into the middle cooking chamber, near the rotisserie catch.
    • Turn each roll halfway through.
    • Remove Air Fryer trays once the lumpia wrappers are golden in color.
    • Arrange on a platter, serve as is, or pair with your favorite ice cream for a delightful Turon à la Mode during summer.

    Notes

This Air Fryer recipe uses an Instant Vortex Plus Air Fryer Oven. Not all Air Fryers cook the same way. It's best to keep watch during your initial tests after purchasing.
    TIPS:
Baby bananas is also known as a sweet banana or "Lady Fingers". If you can’t find them, a regular banana or plantain works too.
Spring roll wrapper can be used if you cannot find lumpia wrappers.
The fruit should be cut uniformly and the wrapper should be rolled tightly for best results.

Our family is friends with a Filipino lady who lives next door. She has mentioned so many Filipino dishes to us and even let us taste her adobo one time. So I was pretty excited when I saw this recipe. I really bought all the ingredients to make it as authentic as possible. And I think I succeeded because she actually thought I bought it from a Filipino restaurant lol! The turon was crispy and had the right amount of sweetness from the saba and langka! Really fun to eat!

I made sure to roll tightly and seal the edges properly. Using lumpia wrappers was a great idea, they gave the turon that perfect crispy texture. Flipping halfway through cooking ensured even browning.
