    Berry mini pancake skewers are such a fun twist on pancakes. These small pancakes fit onto handheld skewers combined with fresh berries and Nutella making them a decadent treat. They are easy to assemble and can be enjoyed for breakfast or make a great snack treat. 

    I am no stranger to adding fruit to pancakes. My apple cinnamon pancakes are another favorite way I like to enjoy pancakes in the fall. The sweet fruit pairs so well with the soft and fluffy pancakes just melting in my mouth. I believe the berries do the same with these mini pancakes this time of year.

    These berry mini pancake skewers are bite size yet so filling just like my pancake in a mug. With summer right around the corner, this is the perfect way to use up those delicious berries. These mini pancakes make an excellent addition to those spring brunch gatherings. And with the color scheme, these skewers are great for any 4th of July event.

    Ingredients

    These mini pancakes come together using a few basic ingredients.

    Pancakes:

    • All-Purpose Flour- The base for the pancakes.
    • Egg- Binds everything together.
    • Heavy Cream- Helps the batter become fluffy and adds a richness to the pancakes.
    • Sugar- This helps the pancake be softer and more elastic when mixed with the wet ingredients.
    • Baking Powder- Helps the pancakes rise.
    • Vanilla Extract- Adds a splash of vanilla flavoring.
    • Salt- Balances out the sweetness in the pancakes.
    • Olive Oil- To coat the skillet pan so the pancake batter doesn't stick.
    • Water- Optional to use if you want a thinner pancake mixture.

    Skewers:

    • Fruit- Fresh strawberries and blueberries are used in this recipe. The strawberries will be sliced to fit the shape of the mini pancakes.
    • Nutella- Perfect on top of the pancakes to add sweetness and creates a decadent flavor. When skewers are assembled you can drizzle over top.

    Instructions

    Let's gather our pancake mix ingredients so we can create the batter for these mini pancakes skewers. Follow the step-by-step instructions below to get started.

    In a large shallow bowl, mix in flour, sugar, baking powder, and salt. Combine well.

    In a small lightly greased skillet, pour 1 teaspoon of the pancake mixture. Flip pancakes after 1 minute or when the bottom part of the pancakes are slightly set and slowly turning into golden brown. Do this in batches and do not overcrowd the skillet.

    Hint: Make sure your pancake batter is not too runny. A slightly thicker batter will help the mini pancakes hold their shape better. Also, when cooking the mini pancakes, aim for uniform size to make skewering easier.

    Variations

    • Use different fruit. Instead of the berries, use sliced bananas, pineapple, mangos or kiwi.
    • Use different spread. In place of Nutella, you can use a chocolate ganache, cream cheese, cookie butter or peanut butter.
    • Add buttermilk. If you prefer buttermilk pancakes, substitute some or all of the cream in your recipe with tangy buttermilk instead.
    • Add meat. If you want some extra protein on the skewer, add in chopped up pieces of bacon, a mini sausage patty or diced sausage link pieces.
    • Add a topping. Powdered sugar makes a great topping to sprinkle on the skewers for a touch of extra sweetness. You can also drizzle chocolate sauce over them before serving instead of Nutella. 
    • Add nuts. To add some crunch, throw in some chopped nuts such as almonds, pecans or walnuts to the pancake batter.
    • Add chocolate chips. Wanting to sweeten things up a little bit more? Add a handful of your favorite type of chocolate chips to the pancake batter.
    • Add dipping sauce. These mini pancake skewers taste great dipped in maple syrup. You can also dip them in honey, whipped cream or your favorite yogurt fruit dip.

    Tips

    Top tip: Don't overmix the batter. Stir the ingredients until combined and incorporated. If you stir too much, the gluten in the flour develops too much therefore, lending to a tougher pancake.

    • Use sturdy bamboo skewers with handles. Bamboo sticks with knots may not be able to steadily handle the sticks of mini pancakes and berries.
    • Use a well-greased skillet or electric griddle. If using a skillet, cook the pancakes on medium-low heat as too not burn them.
    • If you are wanting a thinner pancake batter, add in 1-2 tablespoons of water to thin it out.
    • Keep a close eye on the bubbles that form on the surface of the pancakes. Once these bubbles start to pop and leave small holes behind, it's a sign that it's time to flip the pancakes. This usually takes around 1 minute of cooking on one side.
    • Do not press down on the pancakes with your spatula while cooking; this can squeeze out moisture and produce a drier texture.
    • To save time, prepare your sliced strawberries before you make your pancakes so that everything can be assembled when the pancakes are ready.
    • Slice strawberries as big in diameter as the mini pancakes. If the strawberries are smaller, make the mini pancakes smaller.
    • Assemble the skewers with each having mini pancakes, Nutella, strawberries and blueberries.

    Serving suggestions

    These berry mini pancake skewers are perfect with a side of maple syrup or whipped cream for dipping.

    They also can complement this savory sheet pan eggs with bacon and vegetables for a breakfast option. They are also great with these egg white frittatas.

    You can also pair this with a side of bacon or sausage. The sweetness of the skewers goes very well with these savory meats.

    Storage

    It is important to separate the components of these berry mini pancake skewers before storing. Allow the pancakes to cool completely. Then, stack them with parchment paper in between each pancake to prevent sticking. Place the stacked pancakes in an airtight container or sealable bag and store them in the refrigerator for up to 3 days.

    For the berries, transfer to a separate airtight container. Seal container tightly and refrigerate separately from the pancakes. The berries can be stored for up to 3-5 days in the refrigerator.

    When ready to serve, reheat the pancakes in the microwave then serve with fruit.

    For freezing, once cooled, place individual pancakes between sheets of parchment paper so they do not stick. Then place in freezer friendly airtight container or freezer friendly bag. Store in freezer for up to 3 months.

    Yes! If you are short on time, you can use a store-bought pancake mix. Just follow the instructions on the box.

    Can I make these mini pancakes ahead of time?

    You can absolutely make these mini pancakes ahead of time. They store well in the refrigerator for up to 3 days and freezer for 3 months. See the storage section of the post for directions.

    How do I know my pancakes are ready to flip?

    The pancakes will be ready to flip when the bubbles on the top of the pancakes have popped and there are now small holes.
