Instructions
In a large shallow bowl, mix in flour, sugar, baking powder, and salt. Combine well.
In a deep bowl, beat the egg. Pour heavy cream and continue beating. Add vanilla extract and continue to beat until well combined.
Pour the egg and cream mixture onto the flour mixture. Mix until well incorporated but do not over mix.
If you prefer a thinner pancake mixture, add water 1 teaspoon at a time.
In a small lightly greased skillet, pour 1 teaspoon of the pancake mixture. Flip pancakes after 1 minute or when the bottom part of the pancakes are slightly set and slowly turning into golden brown. Do this in batches and do not overcrowd the skillet.
Assemble the pancake skewers. Each stack should have mini pancakes, strawberry slice, mini pancakes with Nutella, mini pancakes, strawberry slice, Nutella, and two blueberries on top.
Place mini pancakes in a parchment lined baking tray, in a row of 3s.
Top slices of strawberries on the first column of mini pancakes. One slice per pancake.
Evenly spread Nutella on the second column of mini pancakes.
Add the last batch of strawberries on top of the mini pancakes.
Place mini pancakes with Nutella on the first row of mini pancakes. Then add the third row of strawberry with mini pancake on top. Add a drop of Nutella on top of the strawberry.
Using a sturdy bamboo skewer with handle, insert two blueberries. Then skewer at the middle of the mini pancake stacks.
Before serving, drizzle more Nutella. Enjoy.
Notes
Ideally, sliced rounds of strawberries are as big in diameter as the mini pancakes. If the strawberries are small, make mini pancakes smaller and slice strawberries thicker as shown in these photos.Use sturdy bamboo skewers with handle. Bamboo sticks with knots may not be able to steadily handle the stacks of mini pancakes and berries.
