Ingredients
- ½ pound ground pork
- ½ cup mushrooms sliced and roughly chopped
- ½ medium onion sliced into wedges
- 1 cup cucumbers cut into match sticks
- 1 tablespoon grated fresh ginger
- 3 cloves garlic minced
- 1 cup chopped baby bok choy about 3 ounces (or 1 ounce baby spinach and 1 stalk celery, sliced)
- 1 cup chopped spinach about 1.5 ounces
- 2 Tablespoons gluten-free soy sauce divided
- 1 teaspoon apple cider vinegar or white vinegar
- dash red pepper flakes optional
- green onions optional garnish
- oil for cooking
Instructions
