Instructions

Add the cherry tomatoes to the skillet with the sautéed onion and garlic, then cook until the tomatoes begin to soften.

Add the ground turkey to the skillet, placing it over the tomato mixture.

Break up the turkey with a spoon and stir it into the tomatoes, onions, and garlic as it begins to cook.

Continue cooking until the turkey is fully browned and no longer pink, then remove the skillet from the heat.

Slice the zucchini in half lengthwise and scoop out the centers to create boats, leaving a sturdy shell.

Spoon the cooked turkey mixture evenly into each hollowed zucchini half.

Arrange the stuffed zucchini boats in a single layer in the air fryer basket or tray.

Air fry until the zucchini is tender and the filling is heated through, then serve warm.
Tips
Top tip: Adjust the cooking time based on zucchini thickness. Thicker zucchini may need a few extra minutes, while smaller ones can cook more quickly.
- Look for medium zucchini instead of oversized ones, as they tend to have a firmer texture and fewer large seeds.
- Leave a thick border when hollowing out the zucchini to help them hold their shape while cooking.
- Don't overcrowd the air fryer basket. Cook in batches if needed so the hot air can circulate around each zucchini boat.
- Let the zucchini boats rest for 2 to 3 minutes after cooking before serving. This gives the filling a chance to set slightly and makes them easier to handle.
- Use the scooped-out zucchini flesh in another meal. Chop it up and add it to soups, pasta sauce, scrambled eggs, or a stir-fry to reduce food waste.

Variations

Storage
Store leftover zucchini boats in an airtight container in the refrigerator for up to 3 days. When you're ready to enjoy them again, reheat them in the air fryer at 350°F for 3 to 5 minutes, or until the filling is heated through and the zucchini is warm.
You can also warm them in the microwave in 30-second intervals, although the zucchini will be softer than when freshly cooked. Freezing is not recommended, as the zucchini tends to become watery and lose its texture after thawing.

Zucchini Boat with Ground Turkey in Air Fryer
Ingredients
- 8 ounces ground turkey
- 1 piece fresh zucchini approx 150 grams
- ¾ cup sliced fresh cherry tomatoes 15 pieces, or grape tomatoes
- 1 small finely chopped onion ¼ cup
- 1 small chopped red bell pepper ¼ cup
- 2 teaspoons Tamari
- 2 cloves minced garlic ½ tablespoon
- ¼ teaspoon ground sage
- ¼ teaspoon dried thyme
- ⅛ teaspoon cayenne powder
- 75 grams block of mozzarella sliced into ¼ inch each
- ¼ teaspoon kosher salt to taste
- ¼ teaspoon ground black pepper to taste
- 1 teaspoon fresh thyme
- olive oil for sautéing and greasing the zucchini
GARNISH:
- chopped fresh parsley for garnishing
Instructions
- In a heated pan, pour oil and sauté onions until translucent. Add minced garlic and continue to sauté until fragrant.
- Add the tomatoes and bell peppers, then sauté for 3 minutes or until they start to soften and begin releasing their juice.
- Add the ground turkey and season with sage, thyme, cayenne, and a teaspoon of Tamari.
- Sauté the seasoned ground turkey over medium-high heat for 8 minutes or until no longer pink and the internal temperature registers 165°F (74°C).
- Season to taste with salt, black pepper, and the remaining Tamari, if needed.
- Turn off the heat, add the fresh thyme, and mix well.
- Just when the seasoned ground turkey is halfway cooked on the stove, start pre-heating Air Fryer to 379°F (193°C). Set at 12 minutes.
- Thoroughly wash zucchini, cut in half lengthwise, and remove the core with seeds.
- Lightly brush the zucchini with oil, transfer on the Air Fryer tray cut side down, and Air Fry for 5 minutes.
- Add the cooked ground turkey to the slightly tender zucchini and fill equally.
- Top with slices of mozzarella cheese, then transfer Air Fryer tray with the ground turkey stuffed zucchini into the middle cooking chamber, near the rotisserie catch.
- If using an Air Fryer basket, gently place the stuffed zucchini with cheese on the crisper plate and proceed as directed.
- Air Fry for 7 minutes, or until the mozzarella has melted and slightly golden.
