Instructions
In a heated pan, pour oil and sauté onions until translucent. Add minced garlic and continue to sauté until fragrant.
Add the tomatoes and bell peppers, then sauté for 3 minutes or until they start to soften and begin releasing their juice.
Add the ground turkey and season with sage, thyme, cayenne, and a teaspoon of Tamari.
Sauté the seasoned ground turkey over medium-high heat for 8 minutes or until no longer pink and the internal temperature registers 165°F (74°C).
Season to taste with salt, black pepper, and the remaining Tamari, if needed.
Turn off the heat, add the fresh thyme, and mix well.
Just when the seasoned ground turkey is halfway cooked on the stove, start pre-heating Air Fryer to 379°F (193°C). Set at 12 minutes.
Thoroughly wash zucchini, cut in half lengthwise, and remove the core with seeds.
Lightly brush the zucchini with oil, transfer on the Air Fryer tray cut side down, and Air Fry for 5 minutes.
Add the cooked ground turkey to the slightly tender zucchini and fill equally.
Top with slices of mozzarella cheese, then transfer Air Fryer tray with the ground turkey stuffed zucchini into the middle cooking chamber, near the rotisserie catch.
If using an Air Fryer basket, gently place the stuffed zucchini with cheese on the crisper plate and proceed as directed.
Air Fry for 7 minutes, or until the mozzarella has melted and slightly golden.
Garnish with chopped fresh parsley and enjoy these gooey Air Fryer Ground Turkey Zucchini Boats.

This Air Fryer recipe uses an Instant Vortex Plus Air Fryer Oven. Not all Air Fryers cook the same way. It’s best to keep watch during your initial tests after purchasing.TIPS:Use quality fresh zucchini, firm and without mold and bruises. If using frozen ground turkey, thaw it properly according to package directions.Use a thick layer of cheese on top of the cooked ground turkey mixture. This will prevent the cooked ground turkey mixture from burning in the Air Fryer.
