I love how cranberry and orange can turn a simple chicken dinner into something that feels a little more special without adding much work. Fresh orange juice and zest help balance the sweetness of the cranberry sauce and give it a brighter flavor. It reminds me of the sweet citrus combination I use in my orange glazed ham recipe, but here it works especially well with juicy chicken thighs.
I also like that this recipe is easy enough for a weeknight but looks nice enough to serve during the holidays. Letting the seasoned chicken rest before cooking and placing it over the cranberry-orange mixture helps the flavors come together while the air fryer does most of the work. If you enjoy adding fruit to savory chicken dishes, my chicken and mango salad recipe is another easy way to pair chicken with fresh, fruity flavor.
Ingredients

- Boneless chicken thighs (skin on): Provides juicy, flavorful meat while the skin helps create a crispy, golden exterior.
- Olive oil: Helps the chicken brown evenly and prevents sticking while adding a subtle richness.
- Kosher salt: Enhances the natural flavor of the chicken and balances the sweetness of the sauce.
- Ground black pepper: Adds mild heat and depth to complement the sweet and tangy elements.
- Smoked paprika: Brings a subtle smoky flavor and enhances the overall savory profile.
- Garlic powder: Adds a layer of savory, aromatic flavor without overpowering the dish.
Cranberry Sauce:
- Whole cranberry sauce: Provides a sweet-tart base that gives the dish its signature flavor.
- Fresh oranges (juice and zest): Adds bright citrus notes that balance the richness of the chicken and the tartness of the cranberries.
- Light brown sugar: Sweetens the sauce slightly while adding a hint of caramel-like depth.
- Fresh rosemary: Infuses the dish with a fragrant, earthy aroma that pairs well with both citrus and cranberries.
Garnish:
- Fresh orange slices: Adds a pop of color and reinforces the citrus flavor in the dish.
- Fresh rosemary: Enhances presentation while adding a fresh, herbaceous aroma.

Instructions

Dry chicken with paper towels and drizzle all sides with oil. Season with salt, black pepper, garlic, and smoked paprika. Let it sit for at least 15 minutes.

Place 4 orange slices on air fryer tray or basket, top each with rosemary. Combine cranberry sauce, brown sugar, orange zest, and orange juice. Spread over each orange slice.

Place each seasoned chicken thigh over prepared orange slices, skin side up.

Air Fry for 20 minutes at 376°F (191°C) or until the internal temperature reaches 165°F (74°C).

Rest for 5 minutes, transfer to a serving plate, and garnish with a slice of orange and fresh rosemary leaves.
Hint: Let the cranberry sauce mixture come closer to room temperature before adding it to the air fryer. If it's refrigerator-cold, it can slow down cooking where the chicken rests on the sauce and may cause the thighs to cook less evenly.
Variations
- Swap the protein: Use chicken breasts, drumsticks, or even pork chops. Just adjust the cooking time to keep everything juicy.
- Make it sweeter or tangier: Add more brown sugar for a sweeter glaze or a splash of vinegar/lemon juice for extra tang.
- Add heat: Sprinkle in red pepper flakes or a pinch of cayenne for a subtle kick that balances the sweetness.
- Use different herbs: Try thyme or sage instead of rosemary for a slightly different flavor profile.
- Boost the sauce: Stir in a bit of Dijon mustard or soy sauce to deepen the flavor and add complexity.
- Add fruit: Toss in dried cranberries or apple slices for extra texture and natural sweetness.
- Make it saucier: Double the cranberry sauce ingredients if you want extra glaze for serving over rice or veggies.

Tips
Top tip: For better browning, keep sauce off the top skin. Let the cranberry mixture stay mostly underneath the chicken so the skin is exposed to the circulating hot air.
- Use similar-size chicken thighs. Choosing pieces that are close in thickness helps them finish cooking at about the same time.
- Don't overcrowd the air fryer. Leave a little room around each thigh so hot air can circulate and the exposed surface can brown properly.
- Zest the orange before juicing it. It's much easier to remove the zest while the orange is still whole and firm.
- Avoid the white pith when zesting. Use only the brightly colored outer peel. The white layer underneath can add bitterness to the cranberry sauce.
- Check the chicken a few minutes early. Boneless thighs can vary quite a bit in thickness, so start checking the internal temperature before the full 20 minutes are up.
- Add extra sauce after cooking. If you want a stronger cranberry-orange flavor, reserve a little of the cranberry mixture before it comes into contact with raw chicken and spoon it over the cooked thighs when serving.
- Let the chicken rest before slicing. The five-minute rest in your instructions is important because cutting into the thighs immediately can cause more of the juices to run out.

Storage
Store any leftover cranberry orange chicken thighs in an airtight container in the refrigerator for up to 4 days. Make sure the chicken has cooled completely before sealing to prevent excess moisture buildup.
For reheating, warm it gently in a skillet over low to medium heat, adding a splash of water or orange juice to loosen the sauce and keep the chicken from drying out. You can also reheat it in the microwave in short intervals, covering it loosely to retain moisture, though the skin may lose some of its crispness.
FAQs
Yes, you can substitute chicken breasts, but reduce the cooking time slightly to prevent them from drying out since they are leaner than thighs.
Yes, but you'll need to cook them down with a bit of sugar and liquid first to achieve the same sweet-tart consistency as cranberry sauce.
The chicken is done when it reaches an internal temperature of 75°C (165°F) and the juices run clear.
