This slow cooker sloppy Joes recipe delivers bold flavor with minimal effort. It's an easy, hands-off dinner made with seasoned ground beef simmered in a rich, tangy sauce. I've made it on busy weekdays when I want to come home to a cozy meal.

Although sloppy Joes are simple to make using a skillet, I sometimes prep the meat ahead in a slow cooker. What I really like about this method is how the flavors deepen the longer it cooks. After testing the recipe a few times, I found that slow cooking makes the ground beef and tomato sauce mixture taste even better than the quick stovetop version.

When meal prepping, I'll make a double batch and use the leftovers in different ways, like over rice or tucked into a stuffed sweet potato for an easy second meal. It reheats well without drying out, so it's just as good the next day when you need something quick. You can also turn it into my Sloppy Joe Casserole for a simple, comforting dinner that makes the most of what you already have.

    Instructions

Follow these simple steps to make the best Sloppy Joes ever with this slow cooker recipe.

    1. In a medium skillet over medium heat, cook the strips of bacon until crispy. Remove it from the pan, let it cool slightly, then chop it into small pieces.
    2. In the same skillet (using the bacon drippings for flavor), brown the meat until fully cooked. Break it up into small pieces as it cooks.
    3. Add the browned beef and chopped bacon into the slow cooker.
    4. Stir in the remaining ingredients until everything is evenly combined.
    5. Cook on LOW in the crockpot for 6 hours, or HIGH for 3 hours until the mixture is hot and thick like chili.
    6. Spoon onto hamburger buns.

    Tips

Top tip: Let the Sloppy Joe mixture simmer a little longer in the slow cooker on low heat to deepen the flavor and thicken the sauce naturally.

    • Browning the beef and draining the fat before adding it to reduce excess grease.
    • Crisp the bacon first for better texture and stronger smoky flavor.
    • Stir the mixture occasionally to ensure even cooking and flavor distribution.
    • Adjust sweetness or tang at the end by adding a little more brown sugar or vinegar if needed.
    • Toast the burger buns lightly so they don't get soggy when filled.
    • For a thicker sauce, remove the lid during the last 20 to 30 minutes of cooking.
    • Let the mixture rest for a few minutes before serving so the flavors settle.

    Variations

Here are a few reliable substitutions and variations for this Crock Pot Sloppy Joes recipe:

    Substitutions:

    • Swap ground beef with ground turkey for a leaner option that still holds up well in the slow cooker.
    • Replace brown sugar with honey for a slightly lighter, more natural sweetness.
    • Use apple cider vinegar in place of other vinegars for a balanced tang that complements the sauce.

    Variations:

    • Add diced onions or bell peppers for extra texture and a boost of flavor.
    • Stir in Worcestershire sauce to deepen the savory notes or mustard to enhance the tang.
    • Top with cheese for a richer finish.

I like to add a little Worcestershire sauce and a bit of diced pepper. My kids like to sprinkle a little cheese on top when serving.

    Storage

To store homemade Sloppy Joes, let the mixture cool completely before transferring it to an airtight container. It will keep in the refrigerator for up to 3 days. For longer storage, you can freeze the filling in a freezer-safe container or bag for up to 3 months. Make sure to remove as much air as possible to preserve flavor and texture if freezing.

When reheating, warm it on the stovetop in a large skillet over medium-high heat. Or, warm in the microwave at high power in short intervals, stirring occasionally until heated through. If the mixture has thickened too much, simply add a splash of water or broth to loosen it back to the desired consistency.

    Notes

If the mixture seems a little thin at the end of cooking, leave the lid slightly open for the last 20 to 30 minutes to help it thicken.
