In a medium skillet over medium heat, cook the strips of bacon until crispy.
Remove it from the pan, let it cool slightly, then chop it into small pieces.
In the same skillet (using the bacon drippings for flavor), brown the ground beef until fully cooked. Break it up into small pieces as it cooks.
Add the browned beef and chopped bacon into the slow cooker.
Stir in the brown sugar, vinegar, ketchup, garlic powder, salt and pepper.
Stir everything together until evenly combined.
Cook on LOW for 6 hours, or HIGH for 3 hours until the mixture is hot, thick, and flavorful.
Spoon onto hamburger buns.
Notes
The Sloppy Joe mixture should look thick enough to mound onto a spoon without excess liquid pooling at the bottom of the slow cooker. The sauce will continue to thicken slightly as it sits before serving.
