Instructions
- In a heated saucepan with oil, add the onions and sauté until translucent over low heat.
- Add the homemade pumpkin puree. Then sprinkle the seasonings - garlic, cayenne, red pepper flakes, cumin, and coriander. Mix until the seasonings are well combined with the pumpkin puree.
- Pour the broth and bring to a gentle boil for 3 minutes. Then turn the heat to low and simmer for 20 minutes until the flavors come together and the broth reaches the desired thickness.
- Sprinkle with salt and black pepper according to taste, then add more cayenne and red pepper flakes, if desired.
- At the last minute, pour the coconut cream, and stir until well combined, then turn off the heat.
