Instructions
Preheat the Air Fryer to 325°F (163°C). If your Air Fryer is provided with a "bake" function, use this instead of the "Air Fryer" setting. Set to 10 minutes.

In a bowl using a hand mixer, mix butter, brown sugar, and granulated sugar until creamy.

Add the egg yolk and vanilla. Then continue mixing until smooth and emulsified.

Add half of the all-purpose flour, baking soda, and salt. Place a sieve over the bowl and add the cocoa powder, then gently tap until all the cocoa powder passed through the sieve.

Add the remaining flour and mix until just combined.

Scoop 1 tablespoon of the chocolate cookie mixture, packed and leveled, then form into a ball. Then gently place on a parchment-lined Air Fryer tray. Using the thick end of a wooden chopstick, slowly create a well at the center of each ball. Leave at least 2 inches of space on each cookie dough.

Air Fry for 8 to 10 minutes until the sides are crisp and set, while the center is still soft. Using the tip of an unused chopstick, lightly push the center where you made the original indentation before air frying, then allow the cookies to cool for 10 minutes.

Once the cookies are cooled, fill the hollowed center with ½ teaspoon of pistachio cream.
