    This single-serve Eton Mess recipe keeps dessert simple. It combines fresh berries, whipped cream, and crunchy meringue layered into a quick treat made just for one.

    I find this recipe ideal for times when I want something sweet without extra leftovers. It's an easy dessert that comes together fast and feels special enough for any night of the week.

    I came up with this downsized version of the classic British dessert when I wanted a light dessert at the end of the day.     Instructions

    1. Slice the strawberries, toss with half the sugar, and let them sit for 15 minutes to release their juices.
    2. While the strawberries macerate, break the meringue into a mix of small and large pieces for varied texture.
    3. Using a hand mixer, whip the cold cream with the remaining sugar for 1 to 2 minutes until soft peaks form.
    4. Layer whipped cream mixture, strawberries, and meringue in a clear glass or small trifle dish, then repeat the layers. Top with fresh mint if desired and serve right away while chilled.

    Tips

    Top tip: Chill the glass for 10 to 15 minutes before assembling the dessert. It helps the whipped cream stay firm longer, especially on warm days.

    • Pat the strawberries dry after washing so extra water does not thin out the whipped cream as the dessert sits.
    • Assemble the Eton Mess right before serving. Letting it sit too long softens the meringue and changes the contrast between the creamy and crisp layers.

    Variations

    If you don't have the specific ingredients called for in the recipe, don't worry. You can easily vary the recipe to use what you have on hand.

    Substitutions

    • Swap the caster sugar with powdered sugar if you want it to dissolve faster into the strawberries and cream. Granulated sugar can be used, but it doesn't dissolve as quickly. Honey also works, but use a smaller amount since it adds more moisture and a stronger sweetness.

    Storage

    If you have leftovers, cover the glass or transfer the Eton Mess to an airtight container and refrigerate it for up to 1 day. Keep in mind that the meringue will soften as it sits with the cream and strawberries, so the texture will not stay as crisp as when freshly assembled.

    Notes

    Use fresh strawberries without molds and bruises.
    This recipe uses all-purpose cream, but whipping cream would be ideal.
    Most Eton Mess uses white meringue. For a pop of color with the strawberries, this recipe uses store-bought pink meringue.
    The entire recipe used only 1 teaspoon caster sugar. This would allow the natural sweetness of strawberries to shine. Do not add too much sugar, as the meringue is already sweet enough.
