    Wash and slice your potatoes into small pieces and dice up the green pepper.

    Ingredients

    • 2 medium russet potatoes skin on, washed, cut into bite-sized cubes
    • ½ teaspoon granulated garlic or garlic powder
    • ½ teaspoon onion powder
    • ⅛ teaspoon smoked sweet paprika
    • 1 small green bell pepper core removed, diced
    • kosher salt to taste
    • ground black pepper to taste
    • 2 ½ tablespoons butter softened and divided
    • 1-2 tablespoons olive oil

    Instructions

    • Pre-heat Air Fryer at 370°F (188°C). Set at 20 minutes.
    • Using a large bowl, drizzle cut potatoes with olive oil. Gently toss.
    • Season potatoes with salt, black pepper, granulated garlic, onion powder, and paprika. Toss gently.
    • Add softened butter and blend well. Reserve about 1 teaspoon of butter.
    • Making a single layer, transfer seasoned potatoes on the Air Fryer tray. Slowly insert tray into the middle cooking chamber, near the rotisserie catch.
    • Using the same bowl, add diced peppers and remaining butter. Toss to combine.
    • Remove Air Fryer tray after 10 minutes. Add seasoned bell peppers. Gently toss and return Air Fryer tray into the middle cooking chamber.
    • Remove Air Fryer tray once potatoes are crisp on the outside and fully cooked through while the bell peppers are softened and fragrant.
    • Transfer to a serving plate and enjoy as is or pair with your favorite meaty mains.

    Notes

    This Air Fryer recipe uses an Instant Vortex Plus Air Fryer Oven. Not all Air Fryers cook the same way. It's best to keep watch during your initial tests after purchasing.
    Don’t forget to use oven mitts or Air Fryer mitts when removing the Air Fryer tray. Other parts of the Air Fryer are hot too. Be careful.
    TIPS:
    After dicing, soak bite-sized potatoes in water to avoid from browning. Pat dry potatoes before seasoning.
    When directly using the Air Fryer tray, use another tray or baking sheet at the bottom to avoid any mess.

      These were so good! I could eat them every day of my life and not get bored by them. Instead of onion powder I added diced onion that was the same size as my bell pepper chunks. Came out perf!
