Combine all-purpose flour, sugar, baking powder, and salt in a mixing bowl

In a separate small bowl, whisk the egg. Then, stir in milk and vanilla extract.

Pour the wet ingredient mixture into the dry ingredient mixture, then gently combine. Add the softened unsalted butter and continue mixing for a few seconds.

Ingredients

- ¾ cup chopped fresh strawberries washed and hulled
- ⅓ cup granulated sugar
- 3 ½ tablespoons whole milk full fat
- 3 tablespoons softened unsalted butter
- 1 medium egg
- ½ teaspoon baking powder
- ½ teaspoon vanilla extract
- ⅛ teaspoon kosher salt
TOPPINGS:
- 3 to 4 pieces small strawberries washed and hulled
- 1 to 2 teaspoons granulated sugar
Instructions
- Preheat Air Fryer to 350°F (177°C). Set at 12 minutes.
- Combine all the 4 dry ingredients in a bowl. Carefully combine all-purpose flour, sugar, baking powder, and salt.
- In a separate small bowl, vigorously beat egg. Pour milk and vanilla extract into the beaten egg, then stir to combine.
- Pour the egg mixture into the flour mixture, then slightly combine the ingredients for less than 5 seconds. Add the softened unsalted butter and continue mixing for a few seconds, but avoid over-mixing.
- Gently fold the chopped fresh strawberries into the mixture.
- Place 4 silicone muffin molds onto the Air Fryer tray and completely fill each mold with the strawberry mixture equally.
- For the topping, slice each fresh strawberry into 4. Depending on the size, add 3 to 4 slices of fresh strawberries on top of each filling. Generously sprinkle sugar over fresh strawberries and some on the filling.
- If an Air Fryer oven is being used, slowly insert the Air Fryer tray into the middle cooking chamber, near the rotisserie catch.
- If the Air Fryer used has a basket, place the silicone muffin molds on the basket and follow accordingly.
- Air Fry strawberry muffins for 12 minutes or until the toothpick comes clean after a toothpick test.
- Gently remove Air Fryer tray with the strawberry muffins and place on a baking tray to allow the muffins to cool down for a few minutes.
- Once the Air Fryer strawberry muffins have slightly cooled down, remove them from the silicone mold and serve immediately.
