    Ingredients

    • 2 ounces softened cream cheese cut in small chunks
    • ⅓ cup chopped strawberries washed and hulled
    • 1 tablespoon sugar alternative I used Lakanto Monkfruit Sweetener Golden
    • fresh mint as garnish

    Optional (for serving):

    • 15 small strawberries

    Instructions

    • In a small bowl with strawberries, add the sugar alternative, and allow the sugar to draw out moisture from the berries for about 10 to 15 minutes.
    • In a small blender, purée strawberries with sugar alternative. Add chunks of cream cheese and continue to pulse until smooth and creamy. Then transfer into a small serving bowl. Garnish with fresh mint and serve with fresh strawberries.
    • Wash fresh strawberries for serving and gently pat dry. Assemble dip and berries on a small plate. Garnish with some fresh mint and enjoy every fruity dip.

    The sweetness of the dip depends on the natural sweetness of the fresh strawberries. Add half a tablespoon of sugar alternative at a time if the strawberries are a bit tart for your taste.
