The first time I tried them, I was surprised by how much flavor the miso adds. It's not overpowering, just a nice savory depth that makes the carrots taste more interesting. Roasting them in the air fryer gives them slightly caramelized edges which gives them a natural sweetness that balances everything out.

    These carrots with miso glaze go well with simple grilled meats or added to rice bowls. I've even tried them with comfort dishes, like my dairy free mac and cheese. They also work really well with Asian-inspired recipes my teriyaki noodles. The best part is that it gives the meal an elevated feel but it's very easy to pull off.

    • Coconut sugar - Contributes a gentle sweetness that balances the salty and elements.

    Instructions

    Follow these simple step-by-step instructions to roast the carrots and coat them in the glaze.

    1. Preheat Air Fryer at 375°F.
    2. Drizzle oil, season with salt and black pepper, then gently toss to coat the baby-cut carrots.
    3. Place on lined baking sheet. Air fry for 6 to 8 minutes or until slightly fork tender, gently tossing halfway through.
    4. Using the same medium-sized bowl, whisk together miso, hon mirin, coconut sugar, tamari, ginger, and oil.
    5. Once the carrots are slightly fork-tender, remove carrots from the oven air fryer and lightly toss them into the miso mixture. Air fry for another 4 minutes or until tender-crisp without burning the glaze.

    Variations

    • Use maple syrup or honey instead of coconut sugar. This keeps the sweetness while adding a slightly different flavor.
    • Try soy sauce instead of tamari. A simple swap if you don't need the dish to be gluten-free.
    • Add garlic. Fresh minced garlic or garlic powder adds extra flavor to the glaze.
    • Use butter instead of neutral oil. This gives the dish a richer, slightly creamy finish. Sesame oil work great too for a more traditional flavor.
    • Add vinegar. A splash of rice vinegar adds a mild acidity that cuts through the richness of the glaze.

    Tips

    Top tip: Roast the carrots until they're nearly done before adding the glaze. This keeps the miso from burning and gives you better caramelization.

    • Use similar sized carrots so they cook at the same rate.
    • Don't overcrowd the pan, or the carrots will steam instead of roasting.
    • Use a hot oven to help achieve caramelized edges.
    • Line your pan with parchment for easier cleanup and less sticking.
    • Toss the carrots halfway through roasting for even browning.
    • Taste the glaze before adding and adjust the sweetness or salt if needed.

    Storage

    Store any leftover miso-glazed carrots in an airtight container in the refrigerator for up to 4 days. To reheat, warm them in a skillet over medium heat or in the air fryer until heated through to help bring back some of the caramelized texture. You can also use the microwave for convenience, though the carrots may be softer.

    Ingredients

    • 12 ounces carrots I used baby-cut (340 grams)
    • 1 tablespoon neutral oil
    • ⅛ teaspoon coarse sea salt or less
    • ¼ teaspoon ground black pepper

    MISO GLAZE:

    • 2 tablespoons koji miso
    • 1 tablespoon hon mirin
    • 1 tablespoon neutral oil
    • 1 teaspoon Tamari
    • ⅛ teaspoon ground ginger
    • 2 teaspoons coconut sugar

    GARNISH:

    • lightly toasted sesame seeds

    Instructions

    • Preheat Air Fryer at 376°F (191°C). Set at 12 minutes.
    • Rinse and pat dry baby-cut carrots then transfer to a medium-sized bowl.
    • Drizzle oil, season with salt and black pepper, then gently toss to coat the baby-cut carrots.

    • Transfer seasoned baby-cut carrots onto a parchment-lined Air Fryer tray and scatter the same size (typical 2-inch) carrots into a single layer. Slowly insert the tray into the middle cooking chamber, near the rotisserie catch.
    • Air Fry seasoned baby-cut carrots for 6 to 8 minutes or until slightly fork tender, gently tossing halfway through.
    • If using an Air Fryer with a basket, transfer seasoned baby-cut carrots on a crisper plate and follow accordingly.
    • Using the same medium-sized bowl, mix miso, hon mirin, coconut sugar, tamari, ginger, and oil.

    • Once the baby-cut carrots are slightly fork tender, remove from the Air Fryer and lightly toss into the miso mixture. Return the miso-coated baby-cut carrots into the Air Fryer and cook for another 4 minutes or until tender-crisp without burning the glazed vegetables.

    • Transfer to a serving plate and serve as a snack, side dish, or part of a charcuterie board.

    Notes

    This recipe was tested in an Instant Vortex Plus Air Fryer Oven. Not all Air Fryers cook the same way. It's best to keep watch during your initial tests after purchasing.
     
    TIPS:
     
    Package indicated serving, ¾ cup (85 grams), making 4 servings per package.
     
    If the package bought contains different sizes of baby-cut carrots, Air Fry carrots in batches and according to size.
     
    Divide the miso mixture if air frying more than one batch of baby-cut carrots due to different sizes of carrots in one package.
     
    I used Hikari Miso - Enjuku Koji Miso, originally beige but the color darkens when left at room temperature, even if unopened. Store in the refrigerator for unopened or opened koji miso to slow down the natural darkening of the miso.
     
    I used Hon Mirin and Tamari, a gluten-free soy sauce. Use regular soy sauce or simply "soy sauce" if preferred.
