    I love recipes that don't require a lot of effort. That's why I started making parfaits. I've made them on busy weekdays when I need breakfast fast, and I've also served them when friends drop by and I want something that looks put together without much prep.

    This recipe was inspired by my mango parfait. Both can be prepped quickly and sweetened to taste. These yogurt treats are simple, flexible, and honestly one of those recipes I like to keep in my regular rotation. And, I love that this pistachio parfait doesn't use a box of pistachio pudding like other parfait recipes.

    Ingredients

    • Raw honey - Helps bind the granola together while adding natural sweetness and light caramelization.
    • Olive oil - Promotes even toasting and gives the granola a crisp texture without heaviness.

    Instructions

    Preheat Air Fryer to 300°F (149°C). Set at 8 minutes.

    In a medium bowl, add rolled oats, pumpkin seeds, and pistachios. Drizzle with the honey and oil, then stir to combine.

    Air Fry the oat mixture until crisp and slightly golden, mixing every 2 minutes for even air frying. Transfer to a bowl and spread it out to cool, stirring occasionally.

    Add yogurt to a bowl and pour in a tablespoon of honey. Mix well with a whisk or spoon.

    Assemble in a glass by layering yogurt mixture, granola and bite-sized pieces of fresh kiwi and a sprinkling of reserved granola.

    Repeat the layers and then top with the half slice of kiwi. Enjoy for a healthy breakfast or afternoon snacking.

    Hint: Let the granola cool completely before assembling. Warm granola can soften quickly and take away from that satisfying crunch.

    Ingredients

    • 2 pieces fresh green kiwi sliced and cut into 4 (reserve half a slice of kiwi as topping)
    • 6 ½ tablespoons Greek yogurt
    • 1 tablespoon raw honey

    HOMEMADE GRANOLA:

    • ½ cup old-fashioned rolled oats
    • 24 pieces chopped pistachios 2 tablespoons shelled
    • 1 tablespoon pumpkin seeds
    • 1 tablespoon raw honey
    • 1 tablespoon olive oil

    Instructions

    • Preheat Air Fryer to 300°F (149°C). Set at 8 minutes.
    • In a medium bowl, add rolled oats, pumpkin seeds, and pistachios. Drizzle honey and oil, then mix until well-combined.
    • In an Air Fryer tray lined with parchment paper, transfer the prepared oats, then slowly insert the Air Fryer tray into the middle cooking chamber, near the rotisserie catch.
    • If the Air Fryer used has a basket, place the parchment paper with the oat mixture into the basket.
    • Air Fry the oat mixture for 8 minutes or until crisp and slightly golden, mixing every 2 minutes for even air frying. Transfer the homemade granola to a bowl and spread it out to cool down for at least 5 minutes, stirring occasionally.
    • In a bowl with yogurt, pour 1 tablespoon of honey and mix well.
    • Assemble the yogurt parfait in a glass. Pour 2 tablespoons of the yogurt mixture, then add 1 tablespoon of homemade granola. Then add the bite-sized pieces from 1 fresh kiwi and 3 tablespoons of the homemade granola. Pour 3 tablespoons of the yogurt mixture, almost all the kiwi pieces, and a tablespoon of the homemade granola.
    • Pour the remaining yogurt and homemade granola, then top with the half slice of kiwi.
    • Enjoy every spoonful for a healthy breakfast or afternoon snacking.

    Notes

    This Air Fryer recipe uses an Instant Vortex Plus Air Fryer Oven. Not all Air Fryers cook the same way. It's best to keep watch during your initial tests after purchasing.
     
    TIPS:
     
    If possible, remove the seed coat (testa) from the pistachios after removing the shell and before Air Frying. This will expose the green pistachios if you prefer to highlight green-themed foods.
     
    Skip removing the seed coat or skin (testa) to enjoy its antioxidants.
     
    After air frying, cool the homemade granola to crisp up.
     
    Stir homemade granola every 2 minutes while air frying to prevent burning the oats, nuts, and seeds. But if clusters of granola are preferred, avoid over-stirring.
