HOMEMADE GRANOLA:
½cupold-fashioned rolled oats
24pieceschopped pistachios2 tablespoons shelled
1tablespoonpumpkin seeds
1tablespoonraw honey
1tablespoonolive oil
Instructions
Preheat Air Fryer to 300°F (149°C). Set at 8 minutes.
In a medium bowl, add rolled oats, pumpkin seeds, and pistachios. Drizzle honey and oil, then mix until well-combined.
In an Air Fryer tray lined with parchment paper, transfer the prepared oats, then slowly insert the Air Fryer tray into the middle cooking chamber, near the rotisserie catch.
If the Air Fryer used has a basket, place the parchment paper with the oat mixture into the basket.
Air Fry the oat mixture for 8 minutes or until crisp and slightly golden, mixing every 2 minutes for even air frying. Transfer the homemade granola to a bowl and spread it out to cool down for at least 5 minutes, stirring occasionally.
In a bowl with yogurt, pour 1 tablespoon of honey and mix well.
Assemble the yogurt parfait in a glass. Pour 2 tablespoons of the yogurt mixture, then add 1 tablespoon of homemade granola. Then add the bite-sized pieces from 1 fresh kiwi and 3 tablespoons of the homemade granola. Pour 3 tablespoons of the yogurt mixture, almost all the kiwi pieces, and a tablespoon of the homemade granola.
Pour the remaining yogurt and homemade granola, then top with the half slice of kiwi.
Enjoy every spoonful for a healthy breakfast or afternoon snacking.
Notes
This Air Fryer recipe uses an Instant Vortex Plus Air Fryer Oven. Not all Air Fryers cook the same way. It’s best to keep watch during your initial tests after purchasing.
TIPS:
If possible, remove the seed coat (testa) from the pistachios after removing the shell and before Air Frying. This will expose the green pistachios if you prefer to highlight green-themed foods.
Skip removing the seed coat or skin (testa) to enjoy its antioxidants.
After air frying, cool the homemade granola to crisp up.
Stir homemade granola every 2 minutes while air frying to prevent burning the oats, nuts, and seeds. But if clusters of granola are preferred, avoid over-stirring.
