    Ingredients

    • ½ large ripe mango
    • ⅔ cups Greek yogurt 160 grams
    • ¼ cup homemade mango compote
    • ¼ cup homemade granola

    HOMEMADE GRANOLA:

    • ¼ cup old-fashioned rolled oats
    • 3 pieces dried mangoes
    • 2 tablespoons unsalted chopped cashews
    • 1 to 2 tablespoons raw honey
    • 1 tablespoon olive oil
    • generous pinch of kosher salt

    OPTIONAL GARNISH:

    • fresh mint leaves

    Instructions

    • Preheat Air Fryer at 370°F (188°C). Set at 5 minutes.
    • In a medium bowl, combine old-fashioned rolled oats, honey, olive oil, salt, and cashews.
    • Place parchment paper onto Air Fryer tray, transfer and spread the prepared oats.
    • If an Air Fryer oven is being used, slowly insert the Air Fryer tray into the middle cooking chamber, near the rotisserie catch.
    • If the Air Fryer used has a basket, place the parchment paper with the oat mixture in the basket.
    • Air Fry oat mixture for 5 minutes or until crisp and golden and mix halfway through.
    • Transfer the homemade granola to a shallow bowl to cool down.
    • Cut dried mangoes into pieces and mix with the cooled homemade granola.
    • Assemble the Mango Parfait in a transparent glass. Add homemade mango compote, half of the yogurt, half of the homemade granola, the remaining half of the yogurt, and the remaining half of the homemade granola.
    • Add a generous topping of cubed fresh mangoes. Garnish with fresh mint leaves on the side for a pop of contrasting colors.

    Notes

    This Air Fryer recipe uses an Instant Vortex Plus Air Fryer Oven. Not all Air Fryers cook the same way. It's best to keep watch during your initial tests after purchasing.
    TIPS:
    Use quality fresh ripe and fragrant mangoes that are firm to the touch without any bruises to create a delicious homemade mango compote and fresh mangoes as toppings.
    Use quality Greek yogurt and check the expiration before adding to the recipe.
