Ingredients
- ½ large ripe mango
- ⅔ cups Greek yogurt 160 grams
- ¼ cup homemade mango compote
- ¼ cup homemade granola
HOMEMADE GRANOLA:
- ¼ cup old-fashioned rolled oats
- 3 pieces dried mangoes
- 2 tablespoons unsalted chopped cashews
- 1 to 2 tablespoons raw honey
- 1 tablespoon olive oil
- generous pinch of kosher salt
OPTIONAL GARNISH:
- fresh mint leaves
Instructions
- Preheat Air Fryer at 370°F (188°C). Set at 5 minutes.
- In a medium bowl, combine old-fashioned rolled oats, honey, olive oil, salt, and cashews.
- Place parchment paper onto Air Fryer tray, transfer and spread the prepared oats.
- If an Air Fryer oven is being used, slowly insert the Air Fryer tray into the middle cooking chamber, near the rotisserie catch.
- If the Air Fryer used has a basket, place the parchment paper with the oat mixture in the basket.
- Air Fry oat mixture for 5 minutes or until crisp and golden and mix halfway through.
- Transfer the homemade granola to a shallow bowl to cool down.
- Cut dried mangoes into pieces and mix with the cooled homemade granola.
- Assemble the Mango Parfait in a transparent glass. Add homemade mango compote, half of the yogurt, half of the homemade granola, the remaining half of the yogurt, and the remaining half of the homemade granola.
