Ingredients
- 7 ounce Brie wheel of cheese
- 1 cup Mozzarella cheese shredded
- 1 ounce Cream cheese
- ½ cup Almond flour
- ¼ teaspoon Xanthan gum
- ¼ teaspoon Garlic powder
- ½ teaspoon Baking powder

Instructions
- Place the mozzarella and cream cheese into a microwave safe bowl. Heat the mixture for 30 seconds at a time until well blended and smooth.
- Add the cheese dough to a mixing bowl with the almond flour, xanthan gum, garlic powder, baking powder, egg white and salt. Blend until a smooth dough has formed.
- Chill the dough for 30 minutes.
- Preheat the oven to 350 degrees.
- Roll the dough out to about ¼ of an inch thick between two pieces of parchment paper.
- Wrap the dough around the brie cheese to cover.
- Bake for 20 to 25 minutes until the brie has melted.
Notes
Don’t overbake: Keep an eye on the pastry while baking; remove it when it’s golden brown to avoid drying out the dough or over-melting the brie.
Seal the edges well: Pinch the dough edges tightly to prevent any brie from leaking out while baking.
Use parchment paper: Line your baking sheet with parchment paper to prevent sticking and make cleanup easier.
Let it rest before cutting: Allow the baked brie to cool for a few minutes before slicing so the cheese stays gooey but doesn’t run everywhere.
