This grilled salmon recipe for two features a lightly seasoned fillet with crisp skin and tender, flaky fish. Ready in about 25 minutes, it's an easy lunch or dinner that's perfect for weeknights or casual outdoor meals.
Dry the salmon fillet on all sides with paper towels.
Place salmon fillet on a wooden plate, skin side up. Score the salmon skin, making 2 slits with 2 inches apart.
Grease all sides of the salmon fillet with oil and place the salmon fillet skin side down.
Season the salmon fillet with a mixture of granulated garlic, dill weed, salt, and ground black pepper.
Lay the seasoned salmon fillet, skin side down, over the heated grill in medium heat.
Grill the salmon fillet undisturbed for 8 minutes or until the desired grill marks appear and the skin is crisp.
Gently flip the salmon fillet and grill undisturbed for 7 minutes or until the salmon is flaky with an internal temperature of 135°F (57.2°) and the desired grill marks appear.
Rest the grilled salmon fillet for 10 minutes until to reach 145°F (63°C) through residual heat.
Garnish with a pinch of dill weed, fresh parsley, and slices of fresh lemon.

I used tail-end salmon fillet, which is sometimes packaged as a salmon portion. Frozen salmon fillet was purchased and thawed overnight before grilling.Albumin is the white stuff oozing from the salmon fillet as it was grilled over medium heat. It is a natural occurrence when the muscle fibers of the salmon is cooked over medium to high heat. To avoid this, opt to grill over low heat. Use oil with a high smoke point.Clean the grill and grease to prevent the salmon fillet from sticking.I used a grill over a stovetop, but a charcoal grill works too.
