Pan-Roasted Berries:
8piecesmedium fresh strawberrieshulled and chopped
¼cupfresh blueberries
2tablespoonsraw honeydivided
1tablespoonfreshly squeezed lemon juicedivided
Toppings:
8pieceschopped pistachios
1teaspoonraw honey
sprinkle of fresh dill
Instructions
Cut feta into bite-size pieces and, using the back of a fork, press each piece until the feta chunks are crumbled.
Pour yogurt, sprinkle black pepper (if using), dill and drizzle honey over crumbled feta. Mix until the added ingredients are well-combined into the crumbled feta. Then transfer the feta dip in a small serving dish.
In a small pan, roast blueberries over low heat. Pour ½ tablespoon lemon juice and 1 tablespoon honey, then toss together for 1 to 2 minutes or until blueberries are caramelized and juicy. Transfer to a small serving bowl. Do the same procedure for pan-roasting strawberries.
Assemble the berries and feta dip on a small plate. Add some crackers and fresh berries on the side. Top feta dip with pistachios, honey, and dill. Enjoy this generous appetizer for one (or two).
Notes
Use quality strawberries and blueberries. Discard any bruised, moldy, or spoiled berries. Wash and gently pat dry berries thoroughly.
