Ingredients
- ½ lb flank steak or sirloin thinly sliced across the grain
- 1 tablespoon taco seasoning
- Salt and black pepper to taste
- ½ red bell pepper sliced
- ½ green bell pepper sliced
- ½ medium onion sliced
- 2 garlic cloves minced
- 1 teaspoon lime juice
- ½ cup salsa
- 4 small flour tortillas to serve
Optional toppings
- Sour cream
- Shredded cheese
- Fresh cilantro
- Lime wedges
Instructions
- Place the sliced steak in the slow cooker. Sprinkle over the taco seasoning, salt, and black pepper, then stir to coat.
- Add the onion, garlic, salsa, and lime juice. Stir to combine.
- Cover and cook on HIGH for 2 to 3 hours or LOW for 4 to 6 hours, until the steak is tender.
- Add the sliced red and green peppers in the last 30 minutes of cooking so they stay slightly crisp.
- Drain any excess liquid. Serve straight from the slow cooker into warm flour tortillas with your choice of toppings.
Notes
Adding the peppers at the end keeps them from going mushy and gives the fajitas that classic color and texture. For extra flavor, squeeze fresh lime over the top just before serving.
Storage: Leftovers keep in the fridge for up to 3 days and reheat well in a skillet on the hob.
