Pumpkin Deviled Eggs (Thanksgiving or Halloween)

Ingredients

  • 6 hard boiled eggs
  • cup Mayonnaise
  • 1 Tablespoon. Dijon mustard
  • 1 squeeze fresh lemon juice about 1 teaspoon
  • 2 teaspoons paprika
  • salt to taste
  • Mini gherkins sweet pickles

Instructions

  • Hard boil eggs if needed. Slice the hard-boiled eggs in half lengthwise.
  • Remove the yolks from the eggs, and place them into a bowl.
  • Add the mayonnaise, dijon mustard, lemon juice, paprika and salt to taste to the bowl with the egg yolks. Stir to combine well until smooth.
  • Pipe the mixture into the center of the hard boiled egg whites.
  • Cut the tips of the ends off of the gherkins, and place onto the eggs to form the top of the “pumpkin”.

Notes

Allow the boiled eggs to cool down before peeling them. Soaking them in ice water after cooking and peeling them under running water should help the peel come off more easily.
Adjust ingredient amounts as needed. Taste the mixture as you go along to ensure it has the right balance of flavors. If desired, stir in additional seasonings.
