Ingredients

Instructions

  • In a skillet over medium heat, cook the ground beef with Italian seasoning in some olive oil until fully browned, breaking it up into small pieces. Drain any excess fat.
Ground beef and spices in a frying pan on a light cloth, ready to be cooked.
  • Transfer the cooked beef into the slow cooker.
Cooked ground beef in a skillet resting on a textured light green kitchen towel.
  • Add the diced tomatoes (with their juice), beef broth, mixed vegetables, salt, and black pepper.
A slow cooker filled with ground beef, sliced carrots, chopped broccoli, onions, and broth, set on a light textured cloth.
  • Mix everything together so the seasoning is evenly distributed.
A black slow cooker filled with beef and vegetable stew sits on a light-colored textured cloth.
  • Cook on Low for 6 to 7 hours, or High for 3 to 4 hours, until the vegetables are tender and flavors are combined.
A black crockpot filled with beef stew containing carrots, peas, potatoes, and broth, with a ladle lifting a serving from the pot.
  • Taste and adjust salt or pepper if needed, then serve hot. Great with crusty bread or crackers.
A ladle lifts a serving of chunky tomato-based stew from a black Crockpot slow cooker.

Notes

Using frozen mixed vegetables works really well in this recipe. Just add them straight to the slow cooker. If your ingredients are frozen, you may need to add an extra 30 to 60 minutes to the cooking time.
