Cut the extra tip of the sausage casing, if any. Then slice each sausage into 4 equal portions.
Pierce the middle of the bell pepper, onion, and sausage. Then skewer another batch and end with a slice of bell pepper and onion at the end tip.
Lightly brush all sides with oil and grill undisturbed for 4 minutes or until grill marks appear. Gently flip each skewer and continue to grill for another 4 minutes.
Transfer to a serving plate and pair with your favorite sausage dipping sauce.
Notes
I used Johnsonville Smoked Sausages.Soak skewers in water for at least 15 minutes, then wipe with paper towels before using.I used a cast-iron grill over a stovetop but a charcoal grill works too.Lightly brush sausages, peppers, and onions with high-heat oil. I used coconut oil for grilling.15 minutes of prep time includes the soaking time.Makes 2 servings with 1 sausage link per 2 skewers, for a total of 4 skewers in this recipe.
