Properly wash and clean each baby potato, then pat them dry with paper towels.
In a saucepan with boiling water, slowly drop the cleaned baby potatoes. Boil for 8 minutes or until the baby potatoes are fork-tender but not mushy.
Immediately remove from the boiling water once tender and allow to cool.
Once cool to the touch, slice each baby potato in half.
Transfer the halved baby potatoes to a bowl and drizzle with olive oil. Season with salt, black pepper, garlic, and dill weed. Gently toss the seasoned baby potatoes to coat evenly.
In a heated cast-iron grill over medium heat, add the seasoned baby potatoes, cut side down.
Grill the seasoned baby potatoes undisturbed for 3 minutes, or until the desired grill marks form. Then grill on all sides for 3 minutes undisturbed or until the desired grill marks are achieved and each baby potato is golden crisp.
Transfer to a plate and serve with your favorite dip or paired with your grilled meat and seafood mains.

Use similar-sized baby potatoes for even cooking.If the baby potatoes are a bit larger, boil for 1 to 2 more minutes. Do not overcook the baby potatoes in the boiling water, as they can become extra-soft and mushy.Coat the baby potatoes with oil and grease the cast-iron grill with oil to prevent sticking.I used a seasoned cast-iron grill, but a charcoal grill is an option for outdoor cooking.I grilled these baby potatoes in 2 batches using a cast-iron grill over a one-burner stove.Cooking time will be shorter if the heat source is wider and only one batch is used for the entire recipe.
