Fill a large pot with water. Heat on medium-high until boiling.
While the water is heating, wash the potatoes and remove any sprouts. Cut the potatoes into small, even-sized cubes.
Add the cubed potatoes to the pot carefully. Cook for about 6-8 minutes or until soft but not mushy.
Drain and transfer to a large mixing bowl. Add the butter to the bowl, and either mash the potatoes using a potato masher or blend them with an electric mixer until smooth.
Pour in the milk, minced garlic, salt, and pepper. Mix until all ingredients are well combined.
Gently fold in the shredded white cheddar cheese and chopped parsley until smooth.
Garnish the mashed potatoes with a sprinkle of ground nutmeg, if desired, and more cheese. Serve warm.
