Preheat Air Fryer at 380°F (195°C). Set at 15 minutes.
Pat salmon fillet dry on all sides and score the salmon skin without cutting all the way through the flesh.
Gently transfer the scored salmon fillet onto Air Fryer tray and lightly coat with oil, then season with ichimi togarashi (if using), salt, and black pepper. Slowly insert the Air Fryer tray with the seasoned salmon fillet into the middle cooking chamber, near the rotisserie catch.
Air Fry for 10 minutes, then brush all sides, except the skin, with the homemade teriyaki sauce. Return to the Air Fryer for 2 to 5 minutes and until the teriyaki-coated salmon is moist and flaky, reaching an internal temperature of 125°F (52°C) and rest for 10 minutes.
Sprinkle with toasted sesame seeds and enjoy.
Notes
This Air Fryer recipe uses an Instant Vortex Plus Air Fryer Oven. Not all Air Fryers cook the same way. It’s best to keep watch during your initial tests after purchasing.
TIPS:
For moist and flaky salmon, Air Fry until an internal temperature reaches 125°F to 130°F (52°C to 54°C). Resting the salmon will provide carryover heat to reach the higher recommended internal temperature of 145°F.
Depending on the salmon, wild caught or farmed Atlantic salmon, chefs prefer an internal temperature of 115°F to 130°F plus carryover heat.
Keep watch after brushing the salmon with the homemade teriyaki sauce, as the latter can easily char as the Air Fryer heats up.
The homemade teriyaki sauce recipe used in this recipe contains less sugar and soy sauce to help prevent immediate burning when air frying teriyaki salmon fillets.
With several kitchen tests done for this recipe, a store-bought teriyaki sauce easily turns a charred salmon to almost burnt with an additional minute or two.
Sea salt and neutral oil are staples in Japanese cuisine. In the absence of sea salt, kosher salt is an alternative.
For an authentic Japanese experience, ichimi togarashi was used instead of chili peppers for a bit of kick.
In the absence of ichimi togarashi, ground cayenne pepper may be an alternative.
