Ingredients

  • 1 ½ tablespoons olive oil
  • ¼ onion finely chopped
  • 1 clove garlic minced
  • 2 cups low-sodium vegetable broth or chicken broth
  • ½ teaspoon kosher salt
  • ¼ teaspoon dried oregano
  • ¼ t teaspoon smoked paprika
  • ¼ teaspoon ground black pepper
  • ¼ head cabbage chopped into 1-inch chunks
  • 1 medium carrot peeled and chopped
  • 1 celery stalk sliced thinly
  • ½ can 7 ounces chopped tomatoes, or ½ cup fresh tomatoes

Instructions

  • In a skillet over medium heat, add olive oil, chopped onion, and minced garlic. Sauté until the onions are translucent, about 3-5 minutes.
  • Transfer the sautéed onions and garlic to the slow cooker.
  • Add the chicken broth, salt, pepper, oregano, paprika, cabbage, carrots, celery, and tomatoes to the slow cooker.
  • Stir the ingredients well, ensuring even distribution.
  • Cover the slow cooker and cook on low for 4-6 hours or until the vegetables are tender.
  • Before serving, taste and adjust the seasoning if needed. You can add a pinch of more smoked paprika.
  • Ladle the soup into bowls and enjoy.
