Ingredients

Filling

  • 1 cup chopped peaches about ½-inch pieces, pitted and skinned
  • ½ tablespoon brown sugar
  • ½ teaspoon lemon juice

Topping

  • 3 tablespoons all-purpose flour
  • 2 tablespoon brown sugar
  • ¼ teaspoon baking powder
  • teaspoon ground cinnamon
  • 1 ½ tablespoons milk
  • 1 tablespoon butter melted

Instructions

  • Preheat oven or toaster oven to 350° F (177° C).
  • Place the peaches into a small ramekin. Stir in brown sugar and lemon juice. Set aside.
  • In a separate small bowl, mix together the flour, brown sugar, baking powder, and ground cinnamon. Stir in the milk and butter until the batter is smooth.
  • Place ramekin on a small baking sheet. Pour batter evenly over the peaches.
  • Bake for 25-30 minutes, until the topping is golden brown.
  • Serve warm. Vanilla ice cream or whipped cream can be added on top, if desired.

Notes

Use ripe peaches. The fruit should be soft to the touch and slightly fragrant if fresh.
Don't make it too sweet. Be light on the sugar because the peaches will add natural sweetness to the dish.
Be light with the topping. Don't overdo the flour topping because too much will make the cobbler heavy and dense.
