Lay the flank steak flat and season it with salt and pepper.

Combine the cream cheese, mozzarella, and garlic. Spread onto one side of the steak.

Heat half the oil in a skillet. Add spinach and cook until wilted.

Top the cheese layer with the cooked spinach.

Roll the steak into a log and drizzle the remaining olive oil over it.
