    With summer just around the corner, this red white and blue fruit salad is quite possibly the perfect dessert. I just love all the fresh berries in this salad that can be enjoyed just like in my mini pancake skewers. It is a great way to use up all the berries that we go pick locally.

    This strawberry and blueberry salad comes together so easily. The richness of the cream, the fresh berries and the crunch with the coconut chips is a mouthwatering delight during these warmer months. I love having this dessert around the 4th of July.

    While this is a delicious dessert salad, if you enjoy strawberries and blueberries salads then you must try my berry salad. In addition to the berries, it is spinach based with a tangy and sweet blueberry dressing. This is another great summertime light meal option and a wonderful way to enjoy these berries.

    Ingredients

    • Strawberries- Fresh strawberries that can be hulled and cut into 4 slices for the salad are best to use for this salad.
    • Sugar- A little bit of caster white sugar for added sweetness.
    • Coconut Chips- While optional, they add a nice crunch and hint of tropical coconut flavoring to the salad.

    Instructions

    To make this recipe, you will start by washing all the fruit and cutting each strawberry into 4 slices after hulling. Then follow the step-by-step instructions below to make this delicious red white and blue fruit salad.

    In a large shallow bowl, combine cream and sugar. Mix well.

    Gently fold cream mixture and fresh berries until well combined. Chill for at least 2 hours.

    Transfer to a serving bowl. Garnish with coconut chips, blueberries, and strawberries before serving.

    Hint: Chill your canned Nestle table cream or all-purpose cream in the refrigerator for a few hours before use. This helps to thicken the cream, making it easier to coat the berries evenly.

    Variations

    • Use different berries. Raspberries and blackberries make great substitutions or additions to this salad.
    • Change up the crunch. Add in a handful of granola, sunflower seeds, toasted pecans or sliced almonds to add a crunch to go with the creamy juicy fruit.
    • Change the cream. Instead of all-purpose cream, use whipped cream or heavy whipping cream. If keeping dairy free, use coconut cream. If wanting a little protein, use Greek yogurt.
    • Change up the sugar. Wanting a healthier alternative to white sugar? In place of white sugar, sprinkle in coconut sugar, monk fruit, allulose or powdered stevia.
    • Garnish with mint leaves. The hint of coolness complements the sweetness of the berries.

    If you are looking to use up extra blueberries and strawberries, you can serve them over sheet pan pancakes or a coconut panna cotta.

    Tips

    Top tip: Rinse berries and pat dry gently before adding them to the salad. This removes any dirt or residue leaving you with clean and fresh berries.

    • Choose fresh fruits. The fresher the fruit the juicier and more vibrant it will taste.
    • Use a colander when washing the fruit. This can make it easier and is a faster way to clean fruit.
    • Chill all purpose cream for at least 30 minutes before mixing in with berries. If you live in a tropical climate, chill in the freezer for at least 1 hour during the summer.
    • Chill the assembled salad for 2 hours before serving so the flavors blend beautifully together.

    Ingredients

    • 1 cup Nestle all-purpose or table cream chilled
    • ½ cup fresh blueberries
    • 7 large fresh strawberries
    • 2 tablespoons ultra-fine sugar optional
    • 1 tablespoon coconut chips optional

    Instructions

    • Wash and pat dry blueberries and strawberries. Hull strawberries and cut each strawberry into 4 slices. Reserve a few pieces of blueberries and 4 slices of strawberries for garnishing.
    • In a large shallow bowl, combine cream and sugar. Mix well.
    • Add blueberries and strawberries. Gently fold cream mixture and fresh berries until well combined.
    • Chill for at least 2 hours.
    • Transfer to a serving bowl. Garnish with coconut chips, blueberries, and strawberries before serving.

    Notes

    If you don’t have all-purpose or table cream, you can use stabilized whipped cream (dissolved gelatin added to fresh whipped cream) as alternative. Plain yogurt can also be used if you want to reduce calories and fat. Cool Whip can be used, too, if you omit the added sugar.
    Chill canned table cream for at least 30 minutes. If you live in a hot climate, chill in the freezer for at least 1 hour during summer.
    Use a colander when washing fresh fruits.
