    Garlic Mashed Potatoes with Red Skin

    There is no comfort food quite like mashed potatoes. They just absolutely melt in my mouth. Just like the scalloped potatoes or cheesy loaded twice baked potatoes, these cheesy garlic mashed red potatoes are no exception. They are so amazingly creamy and delicious.

    These mashed potatoes with red skin not only are cheesy but have hints of the fall spice nutmeg. This spice gives such a cozy touch to these mashed potatoes. The flavor blends so well with the garlic and cheese. It is a must try to sprinkle some on top before serving. I promise, you will enjoy!

    Another great thing about these potatoes is they are so quick and easy to whip up. Whether you are enjoying them for Thanksgiving or just a regular weeknight, they come together in under 25 minutes.

    They are also made in one pot so minimal clean up is warranted. I just love having this simple, yet flavorful dish on the dinner table.If you enjoy comfort food side dishes, then you must try this crockpot mac and cheese or this sweet potato casserole.

    Ingredients

    A collection of ingredients including potatoes, grated cheese, a pat of butter, a cup of cream, a garlic clove, salt, pepper, nutmeg, and a bunch of parsley arranged on a beige cloth.
    • Red potatoes: Red potatoes are denser and can easily get tender with the skins on providing amazing flavor and texture. The skins also add a beautiful color that just pops with this dish.
    • Butter: Adds rich flavor and helps aid in the creaminess. This recipe uses unsalted butter so you can control the salt amount.
    • Milk: Makes the potatoes creamy. Use your favorite type of milk.
    • Garlic: One clove of minced is incorporated to infuse garlic flavor. You can use fresh or jarred.
    • White cheddar cheese: Freshly grated is best to melt into the potatoes giving a rich and creamy taste.
    • Parsley: Chopped finely and mixed throughout.
    • Nutmeg: Optional to use but provides a hint of nutty flavor that tastes so well with the garlic, cheese and red potatoes.
    • Salt and Pepper: To taste.

    Instructions

    Let’s gather our large pot with water, potatoes, and the handful of ingredients to make these delicious mashed red potatoes.

    While the water is heating to a boil, wash the potatoes and remove any sprouts. Cut the potatoes into small, even-sized cubes.

    Add the cubed potatoes to the pot carefully. Boil for about 6-8 minutes or until soft but not mushy.

    Drain the potatoes and transfer to a large mixing bowl.

    Mash potatoes and mix in butter, milk, minced garlic, salt, and pepper.

    Gently fold in the shredded white cheddar cheese and chopped parsley until smooth.

    Garnish the mashed potatoes with a sprinkle of ground nutmeg, if desired, and more cheese. Serve warm.

    Hint: For an extra creamy texture, try adding a dollop of sour cream or a splash of heavy cream. And if you want to impress your family, sprinkle some freshly chopped chives on top before serving.

    Variations

    • Use different potatoes. This will change the texture and flavor, but Yukon Gold, Russets and Idaho are some common potatoes that can make great mashed potatoes.
    • Change up the cheese. Use shredded Parmesan, Romano or Asiago to have a different cheese flavor.
    • Make it creamier. In place of milk, use heavy whipping cream or half and half to give the potatoes a creamier texture.
    • Use additional herbs. Make these red mashed potatoes a little heartier. Mix in rosemary, thyme, or sage.
    • Add a topping. Turn these mashed potatoes into loaded mashed potatoes. Top with sour cream, bacon bites, chives or additional shredded white cheddar cheese.

    You can also top them off with chicken gravy made without any meat drippings.

    Tips

    Top tip: I highly recommend using a potato masher or handheld mixer for mashing the potatoes up. This will aid in them turning out smooth and creamy instead of lumpy.

    • Cut evenly. Cut the potatoes into small even sized cubes. This will help them cook up evenly and be soft.
    • Mix thoroughly. After mashing the potatoes, mix in the milk, garlic, salt and pepper until all ingredients are combined well.
    • Fold in cheese. Gently fold in the shredded cheese and parsley until smooth. The cheese will melt into the warm potato mixture.
    • Garnish well. Don’t forget to add the sprinkle of nutmeg, additional cheese, and any other toppings you might desire. Serve warm.

    Serving suggestions

    Mashed potatoes with red skin are a great side dish to a main dish such as these slow cooker beef tips. The potatoes would be great alongside or underneath the beef tips.

    Meat and potatoes are a staple so these mashed red potatoes would be perfect with this meatloaf or these oven baked pork steaks. This would be a satisfying meal and a very comforting meal.

    These red mashed potatoes with garlic are an excellent accompaniment to other sides you might enjoy either at Thanksgiving or anytime of the year. Some other great sides would be this green bean casserole or brussel sprouts.

    Storage

    Place leftovers in an airtight container in the refrigerator for up to 4 days.

    To freeze, place in a freezer safe container and store for up to 1 month.

    When reheating, use a microwave oven until warmed through or use a small saucepan until steaming. You may want to add in a splash of milk to loosen them up.

    • 1 pound red potatoes
    • 1 tablespoon butter
    • ⅛ cup milk
    • 1 clove garlic minced

    • Garnish the mashed potatoes with a sprinkle of ground nutmeg, if desired, and more cheese. Serve warm.
